Lemongrass Mint Chicken in Lettuce Cups

·       1 pound ground chicken ·       1 tablespoon plus 1 tsp. Thai or Vietnamese fish sauce ·       4 tablespoons Drizzle Lemongrass Mint Balsamic ·       1/4 cup good-quality soy sauce ·       1 tablespoon lime juice ·       2 teaspoons peanut butter, chunky or smooth ·       4 tablespoons Drizzle Garlic Olive Oil 1·       2 garlic cloves, chopped ·       1 medium carrot, diced  ·       8 canned water chestnuts, chopped  ·       2 green onions, chopped  ·       2 tablespoons minced lemongrass ·       1 or 2 jalapeño chiles, chopped ·       3/4 cup finely diced cucumber  ·       1/2 cup salted roasted peanuts, chopped         Salt ·       12 lettuce-leaf "cups," using iceberg or butter lettuce, or a mix   Preparation 1.     Mix chicken with 1 tbsp. fish sauce and 4 tbsp. Strawberry Balsamic Tiramisu

5 large egg yolks  2/3 cup + 2 Tbs. granulated sugar  16 oz. mascarpone - softened  1 cup heavy whipping cream  1/4 cup sweet Marsala wine  3/4 cup strong brewed coffee or espresso  24 lady fingers  3 tablespoons rum  3 tablespoons Drizzle Strawberry Balsamic  1/3 cup ground chocolate  fresh strawberries Whisk 1/3 cup of sugar with egg yolks for two minutes until light yellow and tripled in volume.  Place the egg yolks in a large heat proof bowl set over a medium saucepan of simmering water.  Add the Marsala and continue whisking constantly for about five minutes or until the temperature of the mixture reaches 150 degrees on a digital thermometer.  Set aside and allow to cool for 10 minutes....

Balsamic BBQ Sauce

Balsamic BBQ Sauce    1 c. Drizzle Balsamic Vinegar (Try…Espresso, Black Cherry, Sicilian Lemon, Ripe Peach, etc)    ¾ c. ketchup    1/3 c. brown sugar    1 clove fresh garlic, minced    1 tbsp. Worcestershire sauce    1 tbsp. Mustard    ½ tsp. Smoked Sea Salt    ½ tsp. Smoked Cracked Pepper  Combine all ingredients in a small saucepan and stir until all of the ingredients are incorporate and mixture is smooth. Simmer over medium heat until reduced by 1/3, about 15 to 20 minutes. Keep warm, serve with chicken, burgers, or steak.
