This pork salami is inspired by the great beer gardens we've visited in Belgium and Germany, where ales are garnished with lemon wedges. We use a citrus-forward belgian ale to give the salami a tangy and malty vibe. Lemon zest and a hint of ginger add brightness to this new American classic.

Lamb and Pork Salami with Za'atar, 5 oz.
Our love of Mediterranean food inspired this salami. Za'atar is a seasoning blend of sumac, thyme, and sesame that compliments grilled lamb, so we thought it would be cool to use it in a salami. We add a bit of cane cola for a hint of sweetness and barky herbaceous-ness that plays well with lamb.
